  • 4 cockerels cut open by your poultry house

  • 1 candied lemon

  • 4 tbsp. tablespoon olive oil
  • 2 tbsp. tablespoon of honey
  • 2 sprigs of thyme

  1. Preheat the oven to 200 ° C. Crush the garlic cloves. Peel the ginger and chop it. Cut the figs deeply into 4.
  2. In a skillet, brown the cockerels in 2 tbsp. tablespoons of oil with the ginger. Add salt and pepper. Cut the candied lemon into cubes and keep only its peel. Rinse them under cold water. Cut the lemon into thin slices.
  3. Place the cockerels with the rest of the oil and the ginger in a large baking dish. Add the garlic cloves, thyme, dried figs, cubes and lemon slices. Pour in the honey and a small glass of water. Sprinkle with cinnamon and bake for 20 min.
  4. Lower the temperature to 180 ° C, distribute the fresh figs in the dish and continue cooking for 15 min. Scrape off the juices a little, add more water if necessary. Adjust the seasoning and serve directly in the dish.
