Recipe for spaghetti meatballs or soft meatballs in tomato sauce

List of ingredients
Cooked pasta (spaghetti or other) – count 150-200 g per person
300 g ground beef (or veal, or chicken or sausage meat)
100 g grated Grana Padano or Parmesan
1 clove of garlic
1 shallot
3 rusks or 1 large slice of dry bread or 4 tbsp. breadcrumbs
fresh parsley
Thyme or oregano
a little flour
For the tomato sauce
400 ml of passata or tomato puree
1 tsp. of tomato paste
olive oil
1 onion
1 clove of garlic
1 tsp. tablespoon of oregano or thyme herbs
Fresh basilic
Salt and pepper
Recipe steps
Cook the pasta in boiling water that you salt at the last moment. Do not add oil to the water, unnecessary. On the other hand at the end of cooking when you drain your pasta, add a little olive oil so that it does not stick.
Prepare the tomato sauce: fry a little garlic and chopped onion in olive oil, then add the tomato paste and tomato puree. Add aromatic herbs, and simmer for 30 minutes over very low heat. I added a teaspoon of sugar in my sauce for the acidity of the tomato
Prepare the meatballs: in a large salad bowl, mix the ground beef, the chopped parsley, the rusks rehydrated in the vegetable broth (or in milk or even water …), then the grana padano, pepper and minced garlic and shallot
Shape the meatballs, roll them in a little flour, and brown them for 6 or 7 minutes in a pan with a little olive oil
Serve the pasta in tomato sauce with the meatballs and fresh basil
